Bệnh do ký sinh trùng và độc tố từ các động vật biển chưa được quan tâm?

Cũng như con người và các động vật khác, cá cũng chịu đựng nhiều căn bệnh và ký sinh trùng. Cá chống lại bệnh tật theo cơ chế đặc biệt và không chuyên biệt (specific and non-specific). Cơ chế không chuyên biệt là phòng thủ thông qua da và vảy cá, cũng như lớp niêm nhầy tiết ra trên biểu bìsẽ ngăn chặn các vi sinh vật và ức chế sự phát triển của chúng. Nếu các tác nhân gây bệnh chọc thủng cơ chế bảo vệ này, cá có thể phát triển đáp ứng viêm, tăng dòng máu đến các vị trí bị viêm nhiễm và phóng thích bạch cầu để cố gắng phá hủy hay tiêu diệt vi sinh vật.

Cơ chế đặc hiệu là đáp ứng đặc biệt với từng tác nhân sinh bệnh cụ thể khi cá nhận ra thông qua miễn dịch thích nghi. Trong những năm gần đây, vaccin đã trở nên sử dụng rộng rãi trong nền nông ngư nghiệp và cá dùng trang trí, chẳng hạn vaccine chống bệnh mụn rộp ở cá hồi nuôi hay virus trên cá koi. Một số loại cá mang tính thương mại mắc các bệnh quan trọng như VHS, ngứa và bệnh whirling.

Tất cả cá mang mầm bệnh và ký sinh trùng, thường điều này ảnh hưởng đến một số chi phí cho cá, nếu chi phí đủ cao thì cần cân nhắc như một bệnh. Tuy nhiên, bệnh của cá không được hiểu biết đầy đủ, những gì chúng ta biết về bệnh của cá thường liên quan đến cá nuôi bể, nuôi trong hồ thủy sinh (aquaria fish) và gần đây là cá trang trại (farmed fish). Bệnh trước hết là tác nhân ảnh hưởng lên tỷ lệ chết của cá, đặc biệt là cá còn nhỏ.

Cá có thể hạn chế tác động của vi sinh vật và ký sinh trùng bằng các phương thức sinh hóa và hành vi và những cá như thế có lợi điểm sinh sản. Các yếu tố tương tác trong nhiễm trùng mức độ thấp sẽ dễ dàng gây bệnh và chết. Đặc biệt, những gì gây sang chấn như hạn hạn thiên nhiên, ô nhiễm hay các động vật ăn thịt tấn công có thể dẫn đến các vụ dịch bệnh.

Bệnh cũng có thể là một vấn đề đặc biệt khi tác nhân gây bệnh và ký sinh trùng mang trên những loài đặc biệt cụ thể. Các tác nhân có thể gây bệnh cho cá gồm:

-Nhiễm trùng virus như là esocid lymphosarcoma tìm thấy trên loài Esox spp;

-Nhiễm trùng vi khuẩn như Pseudomonas fluorescens, dẫn đến thối ruear vây cá và phù cơ thể của cá;

-Nhiễm trùng vi nấm hay nhiễm nấm mốc trong nước như Saprolegnia spp.;

-Nhiễm các ký sinh trùng đa bào như các động vật thuộc bộ chân kiếm (copepods);

-Nhiễm các ký sinh trùng đơn bào như Ichthyophthirius multifiliis dẫn đến ich, hay ký sinh trùng Eustrongylides

Ký sinh trùng trên cá là sự xuất hiện thường thấy trong tự nhiên. KST có thể cung cấp thông tin về sinh thái quần thể vật chủ. Chẳng hạn, trong sinh học về cá, cộng đồng KST có thể sử dụng để phân biệt các quần thể khác nhau của cùng loài cá đang sống trên một vùng. Ngoài ra, ký sinh trùng còn biểu hiện một loạt các dòng đặc biệt có thể tập trung trên các vật chủ mang tính khu trú. Nếu hiểu biết các khía cạnh đặc biệt về sinh thái ký sinh trùng này, sẽ mang lại các lợi điểm đúng có thể đưa ra các chiến lược tránh các bệnh lý ký sinh trùng gây ra cho vật chủ và con người.

Thông thường các ký sinh trùng cần tránh giết các vật chủ của chúng, vì sự tồn tại các vật chủ cũng có nghĩa là tồn tại của chúng. Sự thúc đẩy tiến hóa có thể khởi động để KST tránh giết chết các vật chủ của chúng hoặc sự thay đổi một cách tự nhiên trong các chiến lược bảo vệ của vật chủ đủ để giữa cho quần thể vật chủ sống được. Nhiễm ký sinh trùng có thể làm chậm cơ chế tấn công của con cá gai đực. Khi xảy ra, con cái sẽ loại bỏ chúng cho thấy một cơ chế mạnh trong việc lựa chọn kháng ký sinh trùng.

Tuy nhiên, không phải tất cả ký sinh trùng muốn giữ vật chủ của chúng còn sống và có một số ký sinh trùng có chu kỳ đa giai đoạn sẽ cho ra một số vấn đề phiền toái giết chết vật chủ của chúng. Chẳng hạn, một số sán làm cho một số cá hành động trong các phương thức như thế mà chim xem đó là mồi dễ bắt mồi. Các con chim mồi là vật chủ kế tiếp đối với ký sinh trùng trong giai đoạn tiếp theo trong chu kỳ. Đặc biệt, sán Schistocephalus solidus thường có thể nhiễm vào trong cá gai trắng-đen và rồi làm cho chúng nổi trên mặtvì thế chúng sẽ bắn nước tung tóe trên bề mặt nước, trở nên dễ dàng nhìn thấy và dễ bị bắt khi chim bay qua. Các KST có thể là nội (nội ký sinh-endoparasites) hoặc ngoài (ngoại ký sinh-ectoparasites). Một số KST của cá nội ký sinh là đặc biệt, như là giun tròn Philometra fasciati ký sinh trong buồng trứng của con cá gai cái; con ký sinh trùng cái trưởng thành là một loại giun màu đỏ ó thể dài 40 cm, đường kính 1.6 mm và con đực thường nhỏ.

Các ký sinh trùng nội được tìm thấy sống trong các mang cá, gồm cả con sán trưởng thành cặp đôi đóng kén, một số giun tròn sống cặp ba của họ Huffmanela, gồm cả Huffmanela ossicola sống trong xương mang cá và ký sinh trùng giun dẹt có tiêm mao đóng kén Paravortex. Các protist Myxosporea khác nhau cũng ký sinh trên các mang cá, ở dó chúng ở dạng nang.

Các mang cá cũng là nơi thích hợp của nhiều loại ký sinh trùng, dính với mang cá nhưng sống ngoài mang cá. Các loại đó gọi là loài sán sống ký sinh trên cơ thể của cá (monogeneans) một số nhóm bộ chân kiếm kí sinh trùng có thể còn nhiều. Các ký sinh trùng bên ngoài khác tìm thấy trên mang cá là con đĩa hút máu (leeches) và trong nước biển, ấu trùng của các gnathiid isopods. Các ký sinh trùng của cá đẳng túc (isopod fish parasites) hầu như mở rộng và hút máu.

Ấu trùng của họ Gnathiidae và các cymothoidids trưởng thành có công cụ sắc nhọn và có phần miệng hút và chân có móng vuốt thích nghi với việc leo trèo trên các vật chủ của chúng. Cymothoa exigua là loại ký sinh trùng của nhiều loại cá biển khác nhau. Nó có thể gây ra lưỡi của cá phì đại. Các rối loạn ký sinh trùng khác gồm có Gyrodactylus salaris, Ichthyophthirius multifiliis, cryptocaryon, bệnh velvet, Brooklynella hostilis, các lỗ trong đầu, Glugea, Ceratomyxa shasta, Kudoa thyrsites, Tetracapsuloides bryosalmonae, Cymothoa exigua, đĩa, sán lá, chấy và rận trên cá hồi. Mặc dù, các ký sinh trùng nhìn chung coi là có hại, việc loại bỏ các loại ký sinh trùng là không cần thiết. Các ký sinh trùng chiếm nhiều hơn một nửa đa dạng đời sống; chúng thực hiện các vai trò sinh thái quan trọng mà hệ sinh thái mất thời gian thích nghi với, và nếu không có ký sinh trùng có thể dẫn đến sinh sản vô tính, giảm sự đa dạng dòng lưỡng hình giới tính. Các ký sinh trùng cung cấp một cơ hội cho chuyển dạng chất liệu di truyền giữa các loài. Hiếm hơn, nhưng có ý nghĩa, đôi khi điều này hỗ trợ sự thay đổi tiến hóa và ngược lại thì không xảy ra, hoặc mất thời gian hơn.

Tổ chức Y Tế thế giới (TCYTTG) ước lượng có khoảng 40 triệu người trên thế giới đang bị nhiễm ký sinh trùng vì ăn cá sống. Năm 2002, cấp lãnh đạo y tế Việt Nam cũng đã tuyên bố là có vào khoảng 5 triệu người Việt Nam  trong diện nguy hiểm vì có tập quán ăn cá sống, trong số này có lối 500.000 người đã bị nhiễm giun sán từ cá (Reuters, 2002). Riêng tại Canada, sác xuất nhiễm ký sinh trùng từ các lát cá bán ra để làm sushi rất thấp. Việc tiêu thụ thủy hải sản sống hoặc nấu không thật chín lúc nào cũng vẫn là một mối đe dọa cho sức khỏe con người. Sự an toàn tuyệt đối hay là zero không bao giờ có được.
